Ingredients

  • 2 little gem lettuce
  • 2 red apples, thinly sliced
  • 120g Snowdonia Rock Star cheese, thinly sliced
  • 2 tbsp chopped roasted hazelnuts
  • 3 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp Snowdonia Rhubarb & Gin Chutney
  • Black pepper

Method

  • To create the dressing, combine the extra virgin olive oil, white wine vinegar, Rhubarb & Gin Chutney and black pepper. Place in a screw top jar and shake vigorously.
  • Place salad leaves and apple slices in a large bowl, drizzle with Rhubarb & Gin salad dressing and toss gently to ensure evenly coated. Arrange on a serving platter.
  • Crumble over Rock Star and scatter chopped hazelnuts over salad.
