Rock Star Apple and Hazelnut Salad with Rhubarb & Gin Dressing
Ingredients
- 2 little gem lettuce
- 2 red apples, thinly sliced
- 120g Snowdonia Rock Star cheese, thinly sliced
- 2 tbsp chopped roasted hazelnuts
- 3 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar
- 1 tbsp Snowdonia Rhubarb & Gin Chutney
- Black pepper
Method
- To create the dressing, combine the extra virgin olive oil, white wine vinegar, Rhubarb & Gin Chutney and black pepper. Place in a screw top jar and shake vigorously.
- Place salad leaves and apple slices in a large bowl, drizzle with Rhubarb & Gin salad dressing and toss gently to ensure evenly coated. Arrange on a serving platter.
- Crumble over Rock Star and scatter chopped hazelnuts over salad.
