Black Bomber and Bacon Breakfast Pancakes
Ingredients
- 250g plain flour
- 2 large eggs
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- Pepper (to season)
- 200ml milk
- 150ml buttermilk
- 6 rashers streaky bacon
- 100g Black Bomber (finely grated)
- Maple syrup
Method
- 1. Mix all dry ingredients together in a large bowl.
- 2. Whisk eggs, milks and 50g cheese with pepper in a large jug.
- 3. Gradually add liquid to flour mixture, whisking constantly until you have a smooth batter.
- 4. Cook pancakes in a greased heavy bottomed pan. Using a small ladle, pour mixture into hot pan.
- 5. Sprinkle each pancake with some crumbled bacon and cheese. Cook until set and then flip over to cook other side.
- 6. Serve immediately with maple syrup drizzled over each pancake.
