Bouncing Berry Cheese Scones
Ingredients
- 75g Bouncing Berry, finely grated
- 200g self-raising flour
- 30g butter, diced
- 1 tbsp caster sugar
- 1 large egg, beaten together with 3 tbsp milk and 1/4 tsp vanilla extract
Method
- Heat oven to 200°c or Gas 7.
- Sift the flour into a large mixing bowl.
- Rub the butter into the flour until mixture resembles fine bread crumbs.
- Stir in 75g of the Bouncing Berry® grated cheese
- Gradually add in the egg, milk and vanilla extract mixture, and mix until you have a soft dough (a little more milk can be added if dough is dry).
- Lightly flour a work surface and turn dough out, gently knead together and pat down until approximately 2cm thick. Cut into 8x rounds using a 5 or 6cm metal cutter.
- Place scones on a lightly greased baking tray and brush the tops lightly with milk.
- Bake for approx. 15 minutes until risen and golden brown.
- Cool on a wire rack. Enjoy warm with cream and strawberry jam, or for a savoury twist, try with a Snowdonia Cheese fruit chutney.
